It all starts with cocoa seeds. These little beans go through some special processes like fermenting, roasting, and crushing to become cocoa liquor. This is the base for all chocolate, whether it’s a candy bar from the vending machine<\/a> or a chocolate-covered office pantry snack<\/a>. If you\u2019ve ever left chocolate in a hot car and then tried to harden it back up in the freezer, the uncontrolled temp change can give it a whitish appearance. That is fat bloom.
